Mike + I love the people and the food at Thai House. Their lunch deal can't be beat + it's 3 blocks from our house. We both LOVE the Chilli Fried Rice, so last night I took a crack at making it at home. Full Disclosure - this is how I grew up learning how to cook. My Mom could make anything delicious out of whatever was in the fridge.
Ingredients:
1 cup brown rice, 1/2 red pepper, 3 celery stalks, 3 carrots, 1/4 large daikon, 1/4 cauliflower, handful of kale + garlic, red chlli flakes + hot sauce to taste + sesame oil.
I cooked the rice in our steamer before heading out for my afternoon meeting. When I returned home, I cut all the vegetables fairly small - like fried rice small. In a large pan I heated up the sesame oil.
Starting with the hardest vegetables first, I added the daikon + carrot to the pan plus garlic. Cover and let the heat create steam to soften the veggies. Next, the cauliflower + celery hit the pan; then the red pepper. Adding in the cooked rice at this point, I covered the pan and let it heat up and steam to soften the rice. At this point I added red chilli + some hot sauce - like 5 - 6 "dashes" and gave it a good stir. Add the kale and cover for 3 - 5 mins to soften. Voila, done!!
Reviews are it was delicious and WAY healthier than when we go out. As well, it was sooooo easy!
